Sausage Scramble
Good Morning!! Today’s posts are, apparently, all about saving money. Making restaurant type food at home, for much less. My husband loves the scrambles that have become a big thing at the breakfast diners. You know the ones with scrambled eggs, breakfast meat, and potatoes all cooked together. Every time he orders one, at $7-$10 a pop, I cringe because I know I could make it at home for far less. So that’s what we had this morning. The amount of time it would have taken to get ready, drive to Bob Evans, and wait for a table, I cooked, ate, and cleaned up. This is a simple dish with lots of flavor. It can be designed to your liking. I had sausage available, but you can use bacon or ham. I made it with scrambled eggs, but if you prefer fried, you can set those right on top, instead of mixing the eggs into the dish. Play around, I guarantee this will be a family favorite.
Cook sausage, crumbling while cooking. Transfer sausage to a paper towel and set aside. Drain grease. Using same pan, add EVOO and cook potatoes. Adding salt and pepper while cooking. In the meantime, beat eggs together with milk, salt, and pepper. Mix well and set aside. Once potatoes are tender and browned, add peppers and onions. Cook for 1 minute. Add sausage. Stir together. Add egg mixture and cook until eggs are done. Stir occasionally while eggs are cooking. Add salt and pepper to taste while cooking entire mixture. Once eggs are finished cooking, remove from heat and add cheese.
