Pulled Pork Sandwiches w/Cole Slaw and Baked Beans
I love a good Pit Barbecue restaurant. Pulled pork, brisket, ribs… mmmmm… good. In my younger and frivolous days, I would have just gone out and found the closest B-B-Q place. With husband and son in tow, it makes for a far more expensive experience. Also, Henry really isn’t one for sitting still through an entire meal. Pulled pork at home is easy and much less draining on your wallet. I actually discovered I could make this completely by accident. A few months ago, I had pulled a pork roast from the freezer. The next day, that’s as far as I had gotten in planning the meal for the evening. I was going out that day, so I threw it in the crock pot with B-B-Q sauce and some spices. When I got home, the whole house smelled liked a Pit House. This time around, I planned more thoroughly, and threw in some traditional sides. This is a good and messy meal, so dress in some old clothes, strip the baby down to his diaper and enjoy!
Pulled Pork Sandwiches
Place pork roast in crock pot. Coat top of roast with cumin and paprika. Sprinkle with red pepper flakes, salt, and pepper. Mix water and B-B-Q sauce together and pour over roast. Turn crock pot to low and cook for 8 hours. Just before serving, use a wooden spoon, to finish pulling apart roast (most will have pulled off during cooking) and stir into B-B-Q liquid. Toast hamburger buns and pile high with pulled pork, adding additional B-B-Q sauce, if desired.
Cole Slaw
Shred cabbage and carrots into large bowl. In smaller, bowl combine remaining ingredients, stirring well. Pour over cabbage and carrots, toss. Chill for 3-24 hours.
Baked Beans
Cook bacon and crumble, set aside. Mix remaining ingredients in baking pan, then add bacon. Combine. Cook in 350 degree oven for 45 minutes, until bubbly.
