Plain Jane Chicken & Vegetables w/Garlic Gravy
That’s right garlic gravy. This is a recipe I got from Rachael Ray. You make the chicken and veggies very simply and top all of it with garlic gravy. Who doesn’t love everything covered in gravy? I used broccoli and tomatoes, but you could use asparagus, green beans, or even brussels sprout. I cut the potatoes into fries, but you can do rounds or small quarters. I like to use the whole cut up chicken, but if you and yours prefer all dark or all white, the recipe is the same. Just adjust the cooking time for the size of the pieces. This is a hearty meal, so make sure you have a light lunch when you make this for dinner.

Cut the top off of the garlic head, drizzle with olive oil, and wrap in foil. Place in oven at 375 for 45 minutes (you can actually do this step earlier in the day if you have time). Cut up potatoes, put in baking dish, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat. Add to oven. Rinse chicken pieces and pat dry. Place on baking sheet so pieces are not touching. Drizzle with oil. Sprinkle with salt, pepper, and seasoned salt. Place in oven. If you are not able to fit both dishes (potatoes and chicken) in the oven, place the chicken on the top rack and the potatoes on the bottom. Push the chicken pan as far back as possible and put potatoes towards the front. Chicken and potatoes should cook for about 55 minutes to an hour, depending on the size of the pieces. In the meantime, cut up broccoli and tomatoes, place on cooking sheet and drizzle with olive oil. Sprinkle with salt and pepper. When chicken and potatoes have about 20 minutes left, add broccoli and tomatoes to the oven. Move chicken to the bottom rack and place vegetables on the top. (If you had to put potatoes on the bottom rack, move them to the top with broccoli and tomatoes.) Take the garlic out of the oven and allow to cool. Pop all the cloves from the casings and smash with a fork. Set aside. Begin your gravy by melting butter in saucepan. Add cornstarch and cook for 1 minute. Add drippings/stock and whisk. When gravy becomes thick and bubbly, whisk in garlic. Salt and pepper to taste. Arrange chicken and vegetables on plate and pour gravy over top of everything.
