Sausage & Peppers Pasta
This recipe is a simple pasta dish that I make with the sausage and peppers left over when I make spaghetti. The quantities can be adjusted for what you have on hand. I usually have 1 or 2 sausages left over and 1/2 a green pepper and onion. It is very fast, simple, and delicious.
Cook pasta according to directions on box. Brown sausage, add peppers, onions, and garlic halfway through browning. Cook until peppers and onions are tender. Add cornstarch. Let cook for about 1 minute. Add stock, oregano, red pepper, salt, and pepper. Stir and bring to a boil. Reduce heat and simmer about 10 - 15 minutes. Serve over pasta and top with Parmesan cheese.
