I made Oven Fried Cod, Mashed Potatoes and Carrots, and Peas. For the fish, I had cod on hand, but you can use cod, haddock, or any other white fish. You can also use this recipe to make fish sticks. Just cut the fish into sticks before battering. If you have leftover, freeze them for a quick lunch another day. I paired the fish with pesto mayonnaise. Tartar sauce would have been feasible for this, as well, however, I never touch the stuff, so I have my alternatives. For our starch, I did mashed potatoes and threw in some carrots for variety, color, and a little vitamin A. Peas were are green vegetable, though I’m sure no one needs a recipe for those. I love seafood and fish, however, my son and husband are not big fans. I make concessions most of the time and reserve my fish eating for restaraunts. When I do throw it in, I like to make things that aren’t too “fishy”, in the hopes their tolerance will build up. Though, the recipe doesn’t call for it, I would recommend a little salt and pepper directly on the fish before battering.
Our house loves mashed potatoes! But they don’t offer a whole lot in the way of being figure friendly. An easy way to beef up the nutritional value is to throw some other nutrient reach veggies in the boiling water and mash them together. I prepare them the same as I would regular mash potatoes. I love carrots, so it was double yummy for me, but you can use cauliflower, squash, or sweet potatoes. Enjoy!
Oven Fried Cod
Heat oven to 500. Cut fish into desired size (sticks, cubes, small fillets). Mix corn meal, bread crumbs, dill weed, paprika, salt, and pepper. Pour milk into separate shallow dish. Dip fish into milk, then coat with corn meal mix. Place cod in ungreased pan, Drizzle with butter. Bake uncovered 10 minutes, fish should easily flake.
Potato & Carrot Mash (1 large or 2 small potatoes are usually recommended per person. Adjust accordingly.)
Cover potatoes and carrots with cold water. Bring to a boil and boil for appx 30 mins. (Time will depend upon the size of your cuts. The smaller the veggie, the less boiling time.) Remove from heat, drain. Return vegetables to hot pot to dry up any remaining liquid. Mash to desired texture. Add butter, salt, and pepper. Blend. Add milk until desired creaminess is achieved. Again, potatoes are a very personal dish. Add or remove butter, salt, pepper, and milk as you wish. If you are unsure, add less, taste, and adjust as needed.
