Time to use more of my greens. This soup has similar ingredients to making greens as a side; traditionally, you use a ham bone and beans. We had a very long day, so coming home to the smells of a cooked meal was fantastic. Had we not been beyond late getting home, I would have thrown some corn bread in to go with this. Ham being full of sodium, this recipe did not call for salt. I did, however, add some to my individual bowl. My husband thought it was good, as is.
In a crock pot, combine beans, ham, carrots, onion and pepper. Stir in undrained tomatoes and broth. Cover and cook on low for 6-8 hrs or high for 3-4 hours. Stir in kale just before serving. Sprinkle each serving with Parmesan cheese, if desired.
