Henry “helped” with this! He was also the unofficial taste tester (while Mommy’s back was turned). These sugar cookies are flaky and light. The recipe calls for shortening, but be careful if you try to substitute, the shortening is what gives the cookie the flakiness. They are perfect for using with icing, but too soft for cutouts (let me know if you need a recipe for that!). Make some with your kids and start a new Halloween tradition.
Cream butter and shortening. Add sugar, baking soda, cream of tartar, and salt. Mix until combined. Blend in egg yolks and vanilla. Gradually add flour. (If you are using a mixer, combine as much flour as you can and then mix the rest by hand.)
Make into 1” balls and place 2” apart on ungreased cookie sheet. Bake at 300 for 15 minutes or until edges only start to firm. Let rest for 1 minute on cookie sheet, transfer to wire cooling rack. Cool completely before icing with buttercream.
