Meatloaf
Nothing makes you feel better on a dreary, rainy day than comfort food. And meatloaf is one of my favorites. A hearty portion of the succulent meal and I’m instantly happier. Some folks make theirs with gravy, I chose to top mine with a sweet and tangy ketchup sauce. If you prefer gravy, it would be easy enough to skip the glaze and reserve the drippings. I paired this with some of the huge broccoli I got from my picking expedition and rice. I steamed the broccoli and lightly salt and peppered it. The rice is from an Uncle Ben’s box, I admit it. Like I said, it was a dreary day, it was lucky I managed to motivate myself enough to make dinner at all. As with most meatloaf recipes, this can be adjusted to your personal taste. Not a fan of garlic, skip it. Prefer beef instead of turkey, mix it up. Need to make it for a family of 6, double the recipe and use 2 loaf pans. Making dinner is about sitting down with the family and enjoying good food, so don’t get bogged down with the specifics. Try different things and if it works great, if not, you’ll know next time. Enjoy a good meal with your family tonight.

In a medium to large bowl combine ingredients for meatloaf, adding meat last. Using hands, gently combine. Be careful not to over mix as it will make the meat less firm. Put in loaf pan and bake in a 350 oven for 1 1/4 hrs. Remove from oven, top with ketchup mixture, spreading evenly, and bake for another 10 minutes.
