It was actually leftovers of a soup I made a few days ago. As with most soups and stews, it was even better the 2nd time around. I love the winter months because there are so many things you can just throw in the crock pot. I don’t have to stand over the stove after a long day of chasing my 2-year-old around. The recipe calls for ground beef, but I am preferable to ground turkey. If you don’t care for cabbage or haven’t tried it, this is a great recipe to incorporate it into your diet. The cabbage blends very well with the rest of the ingredients and it is a mild flavor in the soup. I got the original recipe at All Recipes. Here is my variation of it. The next time I will be adding a chopped jalapeno pepper for a little spice.
Brown turkey with onions in skillet with olive oil over medium heat. Lightly salt and pepper. Drain. Add to crock pot, along with with remaining ingredients, stirring to blend beef bouillon. Cover and cook. High setting for 4 hours, low setting for 6-8 hours. About 1/2 hour before ready to eat, cook rice according to package directions.
Serve soup over rice and serve along side a spinach salad.
